CBU & Louisbourg Seafoods

Louisbourg Seafoods in Cape Breton harvests and sells 5 million pounds of Snow Crab annually, but it’s only the legs and shoulders that go to the market. This means the company ends up discarding about one-third of the crab in production, which results in a lot of organic waste. Dr. Stephanie MacQuarrie at Cape Breton University saw this as an opportunity and through the power of the Springboard network, got connected to Louisbourg Seafoods to take that waste stream and turn it into a new product.
